I was looking for a new potato salad for Father's Day to accompany ribs. I kept true to the recipe and have to say thank you! It is creamy and tasty with simple ingredients. The pimentos add a wonderful flavor after everything had time to mingle! Will be making this all summer long! Perfect addition to my cookout recipe collection.

Made this for a potluck for my college/married Sunday School activity, we are conservative Baptists and we went full Pentecostal over it! Lol

Seriously though, it was a hit. I doubled the recipe, and used red potatoes, otherwise stayed true since it was my first go around. My wife thought my usual potato salad is great, but this one knocks it out of the park. Looks like I have a new go-to!

Made this exactly according to the recipe..I thought you were supposed to , in order to give it a fair rating??? Sorry, but adding things and taking things out and substituting isn't the same recipe. This salad had a nice flavor, reminded me of a loaded bake potato and I liked that it didn't have a lot of mayonnaise and the subsequent hung-over mayonnaise taste. I think the pimento is actually what brings all the flavors together. For ease, better to buy a small can of chopped pimentos next time, the pimentos are kinda slippery to chop and I ended up using kitchen sheers. Good make ahead recipe and although I won't say it's my all time favorite potato salad recipe, I would certainly make it again. I think this is a recipe that deserves all the correct ingredients..bacon bits? No thank you. Give me real bacon. I served it with grilled chicken and baked beans to give to our new pastor's family for their first night in their new home here.

This is absolutely the best potato salad ever! I made this for a large party. I doubled the ingredients, but tripled the sour cream and mayo dressing. I also added two grated hard boiled eggs, and one teaspoon of celery seed.

This potato salad is delicious! Very light and flavorful... not heavy like most potato salads. Although I felt the amount of potatoes called for was too much for the amount of mayo and sour cream they asked for, so I just left out some potato. Otherwise, its perfect! A little extra bacon doesn't hurt either! :)

Very Good potato salad recipe! Instead of 'frying' bacon, I used the Real Bacon bits instead...just sprinkling until I though it was enough..which was probably about two tablespoons. I also used 1/4 tsp of celery seed (per stalk) because I did not have fresh celery. I used red potatoes..left the skin on..and cooked until just tender, then drained. I also added just a sprinkling of dill seed...fantastic!!! Thanks for a great recipe....I will be making this again! :-)

This is the best potato salad EVER! The only change I make is that I use celery seed instead of celery because I can't stand celery. I've made it for two large gatherings and everyone raves. So yummy!

Tried this with Hidden Valley Ranch Dressing in place of the Mayo and sour cream, extra bacon, and no pimiento. Wonderful, my family loved it. We have it at least twice a month.

This potato salad was a hit at our last family gathering, it is even better the next day. The only change I made was substituting olives for the pimientos. If you have the time boil the potatoes whole the night before and put in the refrigerator overnight, this makes the potatoes easier to work with and the potato pieces firm. I have already given the recipe to several people.

My daughter's favorite and everyone else too. We use fresh diced red bell pepper instead of pimento. A few extra slices of bacon doesn't hurt either. Daughter and Dad highly recommend.

Yummm !!! I've been making my mom's mustard potato salad for years and wanted to try something new for a bbq. This is my new favorite ! I think it's the bacon and sour cream that add the punch. I grated boiled eggs into the salad, too. It was so good I could not stay away from the salad ! I made myself sick but I could not step away from the table ! Great as left overs, too.

i did not add the pimentos and it was still delicious. not many kids like the celery so if you can make two side dishes one with celery and one without. it is very yummy i was shopping for bacon for this dish and i was talking with someone about this recipe and i shared the recipe with 3 to 4 people. they could not wait to have it at there next barbeque. enjoy and share pictures and with others....

I made this for a dinner party, and everyone really liked it. Most potato salad recipes have too much mayo in them, and this was just right. The crumbled bacon made it even better. This tastes similar to fixing a baked potato. Chopping the fresh ingredients did take a little longer than the prep time given on the recipe though.
