Imagine a baked potato with all the trimmings: bacon, cheese, and sour cream. Now imagine that as a delicious, creamy soup made in the microwave from start to finish in MINUTES! It’s adelicious soup that is guaranteed to warm your co*ckles and fill you up until dinner.

The great thing about Mug Meals is they just require a handful of ingredients. Use what you have in your fridge and freezer. If you don’t like bacon, add in corn instead. Customize this soup to suit. This MicrowavePotato Soup takes just a few minutes to make, even less time to cook, and you get aperfect single-serving portion. They’re great when you need something simple but still homemade, and they can be made up the day before for even more convenience.

What Is Microwave Potato Soup?

Unlike what you get in a can from the store, my Microwave Potato Soup in a Mug has only what you put into it — and nothing you can’t pronounce. It’s real food made in minutes, with potatoes, cheese, bacon, and anything you want to add for your own perfect loaded baked potato soup!

What You Need To Make The Easiest Potato Soup Recipe

  • Measuring Spoons
  • Microwavable Mug
  • A Microwave

How to Make Microwave Potato Soup In A Mug

Potato Soup for one? Coming right up. Here’s what you’re getting yourself into!(And don’t forget to get the full recipe with measurements, on the page down below.)

  • In a large microwaveable mug, add your potatoes and water. Microwave for 3-4 min or until the potatoes are tender. TIP: Check on it halfway through and stir!

  • Once cooked drain the cooking water.

  • Into the potatoes, stir in the bacon, cheese, onions, and cornstarch. The cornstarch (also knowns as cornflour) will thicken your soup. Stir in the stock and milk and season with salt and pepper.

  • Place in the microwave and cook for 2 1/2 – 3 minutes or until it thickens and all of your ingredients have heated through. Cooking time is based on my 1200W microwave so your timing might vary. Always keep a close eye on your mug while in the microwave so it doesn’t overflow or overcook.

  • Serve topped with sour cream and some more sprinkles of bacon and chives.

Ingredients

  • ¾ cup (6oz, 170g) water
  • 3 tablespoons potatoes , in small cubes
  • 1 tablespoon white onion , chopped
  • 2 tablespoons cheddar cheese
  • 1 tablespoon bacon , cooked
  • 2 tsp cornflour (cornstarch)
  • ½ cup (4oz, 115g) chicken stock (or vegetable stock)
  • ¼ cup (2oz, 56g) milk
  • Salt & pepper
  • Sour cream for garnish , optional

Instructions

  • Add your potatoes and water into a large microwaveable mug. Microwave for 3-4 min or until the potatoes are tender. Check on it half way through and stir

  • Once cooked drain away the cooking water

  • Into the potatoes stir in the bacon, cheese and onions and cornflour. The cornflour will thicken your soup.

  • Stir in the stock and milk and season with salt and pepper

  • Place in the microwave and cook for 2 1/2 - 3 minutes or until it thickens and all of your ingredients have heated through. (Cooking time is based on my 1200W microwave so your timing might vary) Always keep a close eye on your mug while in the microwave so it doesn’t over flow or over cook.

  • Serve topped with sour cream and some more sprinkles of bacon and chives

Recipe Notes

Use a large mug because the water can bubble up in the microwave
Cut your potatoes small because they will cook faster
They can be mixed up in advance for an even speedier meal
Cooking time will vary greatly depending on your microwave and the width and depth of the mug

You can bake them in the oven at 350oF (180oC) for roughly 10-12 minutes. However every mug is different so I advise checking on it after 10 and then make a call.

Dear Gemma, I like make these for my grandkids as an afterschool snack, a homemade cup a soup. Also, my oldest granddaughter wants to take packets of homemade dried soup mix when she starts college. This is what I am about to make–faster than running to a restaurant (even as take-out), and quicker than making a whole pot on the stove or even in the Instant Pot. Dear Gemma, this potato soup recipe is so helpful! My new place only has a microwave and a shared kitchen. This recipe sure comes in handy. I made an improvised version of this recipe today. Improvised, since I made it in a medium-sized bowl instead of a mug, so I have to eyeball the measurement a bit. I had leftover french fries so I used those and skipped the first cooking of potato part. Basically just warmed them up with the chopped onion that I pulled from the freezer and did the rest as written. So good! Topped with green onion and a little bacon.

I’ve just begun cooking and with the little time I have on my hands, your microwave recipes are truly a lifesaver. All my previous attempts at cooking, most often than not, turned out to be disastrous.

I didn’t have cornflour so i substituted 3 tsp of flour inatead and I did not include the bacon and it was a delicous late night snack!

Definitely make sure your potatoes are cooked all the way before you drain the water and add the other ingredients! The potatoes definitely cook faster on their own. It’s really tasty, though, and easy to add your own flair with seasonings and stuff.

This is so good I’m stunned, I didn’t expect it to taste so authentic and delicious it tastes like the real thing, but it took about 15 mins like wow, incredible recipe seriously wow! I used more cornstarch than called for originally btw but that could just be due to my preference of a thicker soup. I used 2 tbsp of cornstarch starch, just to specify.
