This amazing easy-to-make raspberry coulis recipe is a sweet berry-flavored sauce that goes fantastic on all your sweet desserts. You will be blown away at just how complementary this sauce is.

Raspberry Coulis

Raspberry coulis is a thick, pureed sauce made from fresh or frozen raspberries cooked with acid and sugar to help flavor and gelatinize it. It’s then strained until smooth and used as a dessert sauce. This is a beautiful sauce on top of cakes or pies and can also be served as a filling in doughnuts.

The term coulis can apply to various ingredients, such as tomato, pepper, or even pureed shellfish soups. Coulis, initially, was used to describe the juice from cooked meat.

Ingredients and Substitutions

  • Raspberries – You can use fresh or frozen raspberries.
  • Lemon – A little lemon juice will help bring some clean acid to the sauce.
  • Sugar – This will help sweeten up the coulis and help to thicken it.
  • Water – Some cold water will aid in thinning the sauce so it doesn’t get overly thick.

How to Make a Raspberry Coulis

Add the raspberries, lemon juice, sugar, and water to a medium-sized pot.

Cook over medium-low heat for about 15 to 20 minutes or until it begins to break down slightly.

Mash them with a fork and cook for another 10 to 15 minutes.

Strain the coulis through a fine mesh strainer or a chinois.

Make-Ahead: You can make this up to 3 days ahead of time.

How to Store: Cover and keep in the refrigerator for up to 7 days. You can freeze this covered for up to 3 months. Thaw it in the refrigerator for 1 day before using.

Ingredients

  • 1 cup fresh raspberries
  • Juice of ½ lemon
  • ¼ cup sugar
  • 2 tablespoons cold water

Instructions

  • Add the raspberries, lemon juice, sugar, and water to a medium-sized pot.

  • Cook over medium heat until it becomes thick and jammy. This will take about 15 to 20 minutes.

  • Strain the coulis through a fine mesh strainer or a chinois.

  • Chill the sauce until it’s cold. Serve or store.

    I made the Raspberry Coulis to drizzle over the double chocolate cheesecake and the key lime pie. It sure brought out the flavors of both of those desserts. I have the raspberries in my freezer from picking them this last summer so the recipe went together. Really easy and fast. I put it in a squeeze bottle and that made it lots easier to drizzle over the desserts. Thanks Billy Parisi for such great recipes.
